  Agave syrup is an organic sweetener, 1.3 times sweeter than table sugar. Our product in particular has a 17, glycemic index (GI).

 
  The glycemic index is an indicator that measures the speed with which the body absorbs sugar from food and releases it into the bloodstream. Foods with a low GI involve a slow and gradual absorption of the sugars, avoiding sudden changes in the levels of sugar in the blood.

A diet with low GI food would not only help maintain stable levels of sugar in the blood, but also favors appetite control thereby facilitating a more balanced diet with all the health benefits that this entails.

Referring to the edulcorant (sweetness) power of agave syrup, the sweetener can be used to generate a reduction in calorie intake, meaning less agave syrup needed to reach the same level of sweetening than other sweeteners with similar caloric levels.

Agave syrup flavor is fresh and consistent. Due to its being flavor neutral, it enhances or intensifies the flavors of the food it is mixed with.

 
  Premium  
  For the development of our Premium syrup we use organic 100% blue agave which is highly monitored in order to obtain a neutral taste which is a highly sought after characteristic for use in more complex food manufacturing or haute cuisine. It contains a moderate percentage of inulin which contributes to proper bowel function.

  Premium Raw  
  In addition to the benefits of the Premium syrup, Agave Raw Syrup’s main characteristic can be found in the temperature in which it is produced (less than 48 °C or 118 °F). This is to protect and maintain its enzymes and natural properties that may be affected by high temperatures and thus contribute in strengthening the immune system. It is a product made from organic 100% blue agave.

  Crystal Clear  
  Crystal Clear agave syrup is named after its transparent color. Its neutrality is unmatched as it does not preserve aromas and colors characteristic of the Premium or Premium Raw syrup. This product, unlike those previously mentioned, requires a special selection of tender agaves, greater frequency in the cycles of cooling in the process of hydrolysis and an extra filtering process.

  History of the Process

The process to obtain agave syrup is related to the tequila process, due to the fact that raw material is the same. Back in the 90’s, a group of experts was experimenting with an alternative process to obtain tequila and this effort led the way to discover agave syrup and its process, as we know it today.

Originally, the agave syrup process consisted of the extraction of juice from agave cooked in traditional mills and then the process of evaporation would take place in nonorganic pots called “tachos” or “marmitas” (a sort of bucket which is used to apply high temperatures). Through the process of evaporation, water was extracted from the juice, obtaining as a result a dense and sweet syrup.
  Innovation and improvement came from the need to provide consistent process to meet commercial demand, as well as the claim from consumers regarding that the process had to be natural and organic. Currently, our process incorporates organic edge technology and consists of the following steps: juice extraction, hydrolysis, filtaration, high-vacuum evaporation, and bottling.

On the countryside, the cultivation of the agave plant has reverted back to its original natural state. Farmers do no longer work with insecticides, chemical fertilizers, or pesticides and instead they rely on natural and organic composting technologies to provide sustenance to the agave plant. Unlike other large agricultural endeavors, it was found that the agave plant thrives in this environment and maintains a more than sufficient crop yield.
